Curd cheese, known as skuta in the Balkans, is one of those foods people mention constantly without knowing what is actually in it. Part of the problem is that two fairly different products are sold under the same name, and the protein gap between them reaches 6 grams per 100 grams. Here is what you really get from a serving, when it makes sense to eat it, and how much.

What curd cheese actually is

Classic skuta is made from the whey left over after cheese production. The whey is heated to around 85–90 °C, the remaining proteins coagulate, get skimmed off and drained, and you end up with a soft, slightly sweet mass. It is essentially the same process used to make Italian ricotta.

The second product sold under the same name is strained fresh cheese, closer to quark. It is made from milk rather than whey and carries noticeably more protein. Neither is worse, but they are not interchangeable once you start counting macros, so read the label before the product goes into your basket.

Nutrition per 100 grams

Numbers vary between producers, but this is the realistic range that covers almost everything on the shelf:

  • Energy: 90–170 kcal
  • Protein: 8–14 g
  • Fat: 2–12 g (low-fat versions 2–4 g, full-fat 8–12 g)
  • Carbohydrates: 3–5 g, almost entirely lactose
  • Calcium: 90–250 mg
  • Salt: 0.1–0.6 g

The calorie spread comes almost entirely from fat. A full-fat version with 12 g of fat per 100 g runs about 160 kcal, while a low-fat one with 3 g of fat sits near 95 kcal. Across a 250-gram serving that is a gap of roughly 160 calories, which is enough to decide whether your day ends in a surplus or a deficit.

How much protein you really get

A 250-gram serving gives you between 20 and 35 grams of protein depending on the type. That is roughly equivalent to 100–150 g of chicken breast, 3–5 eggs, or 250 g of Greek yogurt. Dairy protein contains all essential amino acids and plenty of leucine — about 2.5 g of leucine per 25 g of dairy protein, comfortably above the threshold needed to trigger muscle protein synthesis.

If the product you bought lists only 8 g of protein per 100 g, then 250 grams is just 20 g of protein. That is the bottom edge of a useful serving for an adult who trains. In that case add an egg, a scoop of protein powder, or 150 g of yogurt alongside it.

Casein or whey: why it changes the timing

Whey-based skuta digests fast — amino acids show up in your blood within 30 to 60 minutes. Milk-based curd cheese is mostly casein, which clots in the stomach and releases amino acids slowly over 4 to 6 hours. That difference is the only reason timing is worth thinking about at all.

When to eat it

After training

If this is your first meal after a session, take 200–300 g of curd cheese and add a carbohydrate source: 60–80 g of oats, a banana, or two slices of bread. Aim for 25–40 g of protein and 40–70 g of carbohydrates within the first two hours. There is no need to chase a 30-minute anabolic window — total daily intake matters far more.

Before bed

This is where the casein version has a clear edge. Roughly 200–250 g eaten 30–60 minutes before sleep delivers 25–30 g of slow-digesting protein across the night. If you train late in the evening, it covers dinner and your overnight intake in one go.

Breakfast and snacks

Curd cheese holds satiety well because it pairs protein with fat and carries few carbohydrates. For breakfast, 150 g with 40 g of oats and some fruit lands around 400 kcal and 25 g of protein. As a snack, 150 g about 90 minutes before training is light enough not to get in the way.

When to skip it

Do not eat 200 g or more within 30 minutes of a heavy leg session or a run. Fat slows gastric emptying and there is a good chance you will feel heavy and burpy through the warm-up. Leave at least a 2-hour gap.

How much per day

Total protein intake for someone doing resistance training sits at 1.6–2.2 g per kilogram of body weight. For an 80 kg person that is 130–175 g per day. Curd cheese can comfortably cover 25–50 g of that, meaning 200–400 g of product daily. Beyond that there is no extra benefit, and the fat, calories and lactose add up quickly.

If you are introducing it for the first time, start at 150 g per day for the first week and then increase. That way you find out whether lactose bothers you before you eat half a kilogram in one sitting.

When to see a doctor

If every dairy serving brings bloating, cramping or diarrhea that persists for more than 2–3 weeks, that is not something to put up with — see your primary care doctor about testing for lactose intolerance. The same goes if you notice a rash, lip swelling or trouble breathing after dairy, since that is an allergy rather than an intolerance and needs urgent assessment.

If you have diagnosed kidney disease, elevated cholesterol, or your doctor has restricted your salt and saturated fat intake, agree on dairy amounts with them rather than following general sports nutrition numbers. The same applies if you already take calcium supplements, since curd cheese and hard cheeses carry a meaningful amount on their own.
