Lower-fat ćevapi in a frying pan: recipe with 53 g protein per serving
How to cook ćevapi in a pan with 5% fat beef mince: exact quantities, a 12-minute cook and an estimated 370 kcal and 53 g protein per serving.

Cook ćevapi in a pan and they usually turn out grey, dry and half of them break up before they reach the plate. The pan is rarely the culprit — the mix is too soft, the meat goes in warm, and it gets turned too early. This version uses 5% fat beef mince and lands at roughly 53 g protein and 15 g fat per serving.
Prep time and servings
Prep: 15 minutes. Cooking: 12 minutes, in two batches of 6. Servings: 4 — twenty 50 g ćevapi, five per person.
There is another 30 to 60 minutes of chilling between mixing and cooking. It is not counted, because you do nothing during it, but do not skip it. Cold mince holds its shape; warm mince spreads across the pan.
Ingredients
- 1000 g beef mince, 5% fat
- 120 ml cold sparkling mineral water
- 6 g salt (about one level teaspoon)
- 3 g bicarbonate of soda (half a teaspoon)
- 8 g garlic (2 medium cloves), crushed
- 2 g sweet paprika
- 1 g ground black pepper
- 10 ml olive oil, for brushing the pan only
If your butcher minces to order, ask for trimmed topside or shoulder put through the mincer twice. Standard mince at 20% fat gives you roughly double the fat per serving for the same protein.
Method
- Tip the mince into a large bowl and add the salt, bicarbonate of soda, garlic, paprika and pepper.
- Add the mineral water in two goes and knead by hand for 3 to 4 minutes, until the mix turns tacky and starts clinging to your palm. That tackiness is what holds the ćevapi together without egg or breadcrumbs.
- Cover the bowl and chill for 30 to 60 minutes. Overnight is fine too.
- Wet your hands and shape 20 ćevapi of 50 g each, about 8 cm long and 2 cm thick. Even thickness matters more than length, because thin ends dry out first.
- Heat a heavy frying pan or a ridged griddle pan over medium-high heat for 2 to 3 minutes. Wipe it with a piece of kitchen paper dipped in the oil — the oil goes on the pan, never into the meat.
- Lay out the first 10 so they do not touch. Cook for 3 minutes without moving them, turn with tongs and give them another 3 minutes. Do not press them down with a spatula; that squeezes out the juice this leaner mix needs.
- Move the first batch to a dish, cover with foil and cook the second the same way. If liquid pools in the pan, wipe it out first, otherwise the second batch steams instead of browning.
- Rest the meat for 3 minutes before serving. With a thermometer, the centre should read 71 °C.

Flatbread, soured cream and chips count separately. Half a large flatbread adds roughly 200 kcal and about 40 g of carbohydrate, which pushes the plate past 570 kcal. Still a sensible meal — just worth knowing it is there.
Variations and swaps
A mix of 700 g beef and 300 g turkey mince brings the fat down to about 11 g per serving. The mixture gets more fragile, so give it the full 60 minutes in the fridge.
Air fryer: 200 °C for 10 to 12 minutes, turning halfway. Oven grill: 220 °C, shelf in the top third, 6 minutes a side. Both need less attention than the pan but give you a weaker crust.
The bicarbonate of soda is optional. Without it the ćevapi are a little firmer and darker — you can taste the difference, but the recipe still works.
Cooked ćevapi keep for 3 days in the fridge and reheat best in a covered pan with a tablespoon of water, which makes them fit a five-day meal prep plan better than most meat dishes. On a lighter day they pair well with chicken and vegetable soup, and if you rotate meat and fish, there is oven-baked salmon with vegetables. For a meat-free swap in the same protein range, try lentil goulash.
When to see a doctor
Mince is not something to eat pink in the middle. The centre should be grey right through, with no pink juices. That matters most for pregnant women, young children, older adults and anyone whose immune system is weakened.
If vomiting and diarrhoea after a meal last more than 48 hours, or you get a fever above 39 °C, blood in the stool or signs of dehydration (little urine, dizziness, dry mouth), see a doctor rather than waiting it out.
